Lunch Burritos

Creating interesting lunches for my daughter that were easy to make or easy to prepare in advance became important to me, when I realized that she was eating a ham sandwich for the 8 th day in a row, and was pushing it away saying “no more” before she even took a bite. So there my quest began!

This recipe can be made in advance and stored in the fridge. It microwaves well for easy reheating and can be made in larger quantities for dinner.

What you will need:

1/2 lbs ground beef

1/2 cup puree salsa

1/2 package of mexican seasoning

1/4 water (or if you have it on hand tomato juice diluted)

1/4 cup puree peppers and carrots

1-2 tbls tomato paste

4 wraps – halved

lettuce – shredded

tomatoes – chopped

cheese thin slice

To Prepare:

In a skillet brown beef until no longer red. Add seasoning, water, puree salsa and puree vegetables; combine until no longer thin. Add tomato paste and let the mixture simmer for 5 minutes.

Meanwhile:

Shred lettuce, chop tomatoes, and slice the cheese. If preparing ahead of put the tomatoes and lettuce in container in the fridge. Cut the Wraps in half.

Assemble:

Place a thin slice of cheese on the bottom with the eat mixture on top. If serving immediately dress with tomatoes and lettuce. Roll the wrap by folding one or both the ends and rolling. Wrap in cello and refrigerate if serving later; save tomatoes and lettuce until serving time. I put a tooth pick through the center to keep them together.
